Local delicacies to try on your North Macedonia tour: baked beans in a clay pot (Tavce Gravce), Skopje kebabs, and the famous Trileçe.

North Macedonian Cuisine

Having stood at the crossroads of Ottoman, Mediterranean, and Slavic cuisines throughout history, North Macedonia has an incredibly delicious and rich culinary culture. Here are some famous dishes you should order while sitting on the streets of Skopje or by Lake Ohrid:

1. The Country’s National Dish: Tavče Gravče

North Macedonia’s traditional and unquestionably most popular dish is Tavče Gravče. It is a much more heavily spiced, thicker version of the baked beans we know. It is baked in clay pots (casserole dishes). It is usually topped with a local sausage (kolbas) or a piece of smoked meat and served piping hot. It is especially popular on cold winter days.

2. Skopje Kebabs and Destan Restaurant

If Sarajevo has its ćevapi, North Macedonia has its Skopje Kebabs (Cevapcici)! These delicious grilled meatballs are served ten to a portion... The famous Destan Restaurant, located in Skopje’s Old Bazaar, has been serving these kebabs with the same great taste for over 100 years. Don’t forget to order a Shopska salad on the side.

3. Shopska Salad (Šopska Salata)

This legendary salad is available throughout the Balkans, but is made at its best in North Macedonia and Bulgaria. It is made with coarsely chopped tomatoes, cucumbers, onions, and peppers, and topped with a generous layer of grated “Balkan white cheese (Sirene).” It goes incredibly well with meat dishes.

4. Trileçe (Three-Milk Cake)

North Macedonia is one of the countries of origin of Trileçe, which has become very popular in Türkiye in recent years. This light dessert, soaked in syrup made by combining cow’s, goat’s, and buffalo’s milk and topped with caramel sauce, is the perfect accompaniment to your tea in Skopje Bazaar.

5. Ohrid Trout (Ohridska Pastrmka)

If your route takes you to Lake Ohrid, be sure to try Ohrid trout, an endemic species found only in the lake, at one of the elegant lakeside restaurants, accompanied by white wine.
